How many sausages are in a pound?


Roughly four sausages per pound. Some sausages are larger and some are smaller. Let us know the sausage you are interested in and we will give you a more exact number.


How do I properly cook the sausages?

The most important thing to remember is DO NOT BOIL them. Steam or simmer them. Boiling a natural casing sausage will cause the spices to leak through the casing and most of the flavor will come out.

Smoked sausages are already fully cooked so you just need to warm them up. You can grill/pan fry them 5-7 minutes on each side, steam/simmer them for 15 minutes, or bake them for about 30 minutes with 1/4 inch of water.

Fresh sausages need to be cooked thoroughly. If you're planning to cook them in beer, steam/simmer first for 15 minutes(this way the sausage will get more of the beer flavor), then grill 5-7 minutes(medium heat) on each side. Otherwise, grill first(this way the sausage will get more of the grill flavor) 5-7 minutes(medium heat) on each side then steam/simmer in water for 15 minutes.


How long should I cook my prime rib?


Preheat your oven to 450 degrees. Rub roast lightly with oil, rub salt and freshly ground pepper all over roast(if desired garlic powder can be added). Place roast on rack in open roasting pan(a small amount of water may be added to the pan to avoid splattering). DO NOT COVER. Insert meat thermometer in thickest part of roast. Roast at 425 for 15 minutes. Reduce heat to 300 degrees and roast until meat reaches desired doneness(approximately 15 to 20 minutes per pound). Meat thermometer should reach 135 degrees for rare, 155 for medium, 165 for well done. Remove roast from the oven and allow to let stand for about 15 to 20 minutes before carving. Internal temperature will rise 5 degrees to reach the proper cooking temperatures.

(Caution: be sure to use a proper oven meat thermometer. A standard thermometer will melt in the oven.)

How much BBQ Meat per person?


When we cater we anticipate 1 & 1/2 sandwiches per adult. A pound of barbecue meat should make at least four good sandwiches, and five using the size of most hamburger buns.How many servings are in a rack of baby back ribs?
Normally, each rack is 1 3/4 lbs. You should anticipate each rack to equal 1 or 2 servings.
